Making Breakfast Oats Fun Again

Growing up, breakfast used to be my most favorite meal of the day. I was born a foodie and couldn’t wait to dive into the fridge and freezer to see what new breakfast ideas I could whip up.

I remember my fifth grade home economics class being my favorite. Everything I learned, I couldn’t wait to come home and make for my parents. Of course, it never turned out as perfect as it did in my home ec. class, but it was edible and that’s all that mattered.

Once my food intolerances and allergies started kicking in, breakfast became the meal I dreaded most. I couldn’t eat eggs, cereal, bread, dairy or any of the traditional American breakfast items including the condiments.

Over the years, I’ve played around with a variety of breakfast ideas but none filled me up quite like my oats. I’m so excited to share this recipe with you because it’s been my go-to every morning and my friends, who don’t struggle with food issues, have incorporated it into their breakfasts, too!

This a two-part breakfast, meaning Part A is what you put together pre-microwave and Part B is what you add post microwave, or stove, whichever you prefer.

Recipe:

PART A: Pre-Microwave
1/2 cup Gluten-Free oats
1 cup of unsweetened vanilla almond milk
1 teaspoon of chia seeds
4 packets of Stevia sweetener and a dash of cinnamon

Put in the microwave for 2 minutes or until it’s at the consistency you like.

PART B: Post-Microwave
1 tablespoon Olivo Chocolate (vegan butter substitute)
1 tablespoon almond butter
1 tablespoon Enjoy Life dark chocolate chips
2 packets of Stevia sweetener or however many you like. I prefer sweet.

I’ll forever be a chocolate lover at heart. When I found Olivo’s chocolate, I knew it was a match made in heaven and this was going to be a main staple in my Heidi Friendly food list. Enjoy Life dark chocolate chips are my go-to when I need a quick sweet pick-me-up. I always pop a teaspoon of them in my mouth or add them to my coconut yogurt, coconut ice cream or whatever I can really!
